Pumpkin With Ikan Bilis

This is one of the hubby’s fave dish.

Serves 4

Ingredients
400g pumpkin, skinned and cut into bite size cubes
50g ikan bilis
3 cloves garlic, minced
3 T oyster sauce
2 T Shaoxing Huatiao wine
1 t dark vinegar
2 chilli padis
1 cup water
pinch of sugar
cornflour

Method

Pan fry ikan bilis till crisp. Set aside.

Pan fry pumpkin and garlic till fragrant. Add oyster sauce, wine, chilli, vinegar, sugar and water and simmer till pumpkin is soft and the liquids have become a creamy sauce. Add more water if the pan gets too dry. If it’s too watery, thicken with cornflour (mixed with a little water).

When pumpkin is soft, add the cooked ikan bilis. Stir through.

Garnish with sliced chilli.
