Double Chocolate Chocolate Chip Oatmeal Rum & Raisin Cookies

Makes 20 large cookies.

My own concoction. Very chewy, rich and healthy (coz of the oats).


3 cups old-fashioned rolled oats, coarsely ground
1 cup plain flour
½ cup plus 2 tablespoons cocoa powder
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon coarse salt
1/2 cup (125 g) unsalted butter, softened
½ cup (125 g) dark chocolate, melted
1 cup granulated sugar
1 cup light-brown sugar
2 large eggs
1 teaspoon pure vanilla extract
1 cup raisins, soaked overnight in dark rum
1 cup chocolate chips

Preheat oven to 170 deg C.

Drain raisins and toss raisins in ½ cup of the plain flour.

Stir together oats, flour, cocoa powder, baking soda, baking powder, cinnamon, and salt in a large bowl, set aside.

Cream butter and sugars on medium speed until pale and fluffy. Mix in eggs, vanilla and melted chocolate. Add oat mixture, mix until just combined. Stir in chocolate chips and raisins.

Using a 1 and half inch ice cream scoop, drop dough onto baking sheets lined with parchment paper, spacing 2 inches apart. Flatten slightly.

Bake until golden and just set, about 16 minutes. Let cool on sheets on wire racks 5 minutes. Transfer cookies to racks using a spatula; let cool completely.
