300g brown mushrooms – about 3 to 4 pieces per person
2 cups grated parmesan cheese
2 cups breadcrumbs
salt & pepper
Pre-heat oven to 180 deg C.
Remove stems from mushrooms. Set aside.
Line a flat baking tray with parchment paper.
Mix breadcrumbs, cheese and a dash of salt and pepper.
Stuff mushrooms with cheese mixture, press it in with your thumb. Sprinkle more on top as much as the mushroom can hold without overspilling.
Carefully place stuffed mushroom on baking tray. Repeat until all mushrooms are filled.
Bake for 15 to 17 mins or until the tops of the mushrooms are toasted to a golden brown.
