Key Lime Pie

Adapted from Key Lime Pie recipe by Delia Smith.

Serves 8 to 10

I used regular limes instead of key limes, because I couldn’t find any key limes. The pie turned out great.


200g butter
350g digestive biscuits
6 large egg yolks
800g sweetened condensed milk
2 T of lime zest
300ml freshly squeezed lime juice


Preheat oven to 180 deg Celsius.

Butter a 27 inch pie pan. Line the base with parchment/baking paper. Butter it as well.

Place the pie pan on a flat baking tray and bake 10 mins till golden brown.

Whisk egg yolks and zest till light and fluffy.

Add condensed milk and whisk for another 4 minutes. Add lime juice and mix it up.

Strain the lime mixture to remove air bubbles. Pour the lime mixture into the pie shell.

Bake for 23 to 25 mins. Until the centre of the pie feels just set when you lightly press the centre with little finger.

Remove from oven. When completely cold, cover with clingfilm. Whisk some cream into a stiff craem and spread gently and top the pie with a thin layer of whipped cream.
