Chocolate Chip & Almond Nut Cookies.
These cookies are great! Crispy on the outside and soft in the inside. I ate so many as they came out of the oven!
These cookies are from a modified version of a recipe I had found in the Food Network website. I had decided to try the recipe because it had more than 100 positive reviews. See recipe here.
I modified it a little. Here’s my version.

Makes about 30 small cookies.
Ingredients
2 1/4 C plain flour
1 T baking soda
1 t salt
250g unsalted butter, softened
2 large eggs
1 C castor sugar
1 C light brown sugar (packed)
1 T vanilla essence
1/2 C unsweetened cocoa powder
2 C chocolate chips, or as much as you like
1 C of almond flakes/sliced almonds
Method
Cream butter and sugars till well combined. Add in eggs, vanilla, salt, baking soda. Mix well.
Add in cocoa and flour, a little at a time. Combine well.
Add in chocolate chips and almond flakes. Combine well.
Using a teaspoon, make truffle sized balls of the cookie mixture and place on a large plate. When the cookie balls have been made, place plate in the fridge to chill for 15-20 minutes. In the meantime, preheat oven to 170 degrees.
Place cookie balls on a sheet of parchment paper on a tray. Bake for 8-9 minutes.
