Roast Salmon with Parmesan Cheese Crust

This needs only 5 mins to prepare and 15 mins in the oven to cook.

It’s elegant, simple and delicious. The fish practically melts in our mouths.

Ingredients

2 salmon fillets (about 350 – 400g)
1 tablespoon (heaping) fine breadcrumbs
1 tablespoon (heaping) grated Parmesan cheese
Salt & Pepper (to taste)
2 tablespoons extra virgin olive oil

Method
Preheat oven to 200°C

Wash and dry two slabs of salmon fillets.

Grab a bottle of good extra virgin olive oil.

Drizzle some extra virgin olive oil (about 1 tablespoon of oil).

Using fingers, rub the oil over the fish.

Add 1 heaping tablespoon of breadcrumbs to a bowl.

Add 1 heaping tablespoon of grated parmesan cheese. You can use ready grated cheese or grate your own.

Add 1 tablespoon of extra virgin olive oil to the cheese mixture.

Mix the mixture well.

Place the fish on a sheet of baking paper on a baking tray.

Place the mixture carefully on top of the fish. Use fingers to press the mixture into the fish.

Here’s what they look like when ready to roast.

Add some salt and pepper seasonings. I use Masterfoods’ Garlic Pepper seasonings.

Roast for 15 mins, depending on the size and thickness of the salmon fillets.

Serve with pasta or vegetables.

  1. Looks yummy! I wonder if dory fillet gives the same effect?

  2. Looks nice!
I shall try this too, but I don’t have an oven, maybe will just pan fried it instead :)
    thanks for sharing!

    • Hi Wei Wei, this can’t be prepared by pan frying because the crust needs to be crispy. If you pan fry it, the crust would probably come apart. Do you have a toaster oven? That works too. =)

  3. Hey bling ,
what if i don’t have the garlic and pepper seasoning and parseman cheese and I replace it using salt and white pepper , morezella cheese instead ? Will it taste awful ?

    • It’ll be great too. Give it a try!

  4. Hi Bing,

I tried the recipe and tasted good. But its difficult to take the salmon after roasted from oven, it stucked to the baking sheet and how to avoid the white fatty coming out of the salmon?

    Thanks

    • Hi Michelle, if you used a good quality baking paper, and rubbed extra virgin olive oil all over the fish, it shouldn’t stick to the baking paper. I’ve actually never had anything stick to baking paper, with or without the oil.

The white fat is the salmon’s natural oils flowing out of it when it’s being cooked. Unless you pan fry salmon, instead of roasting it, they are inevitable.

  5. Hi Bing

I tried the recipe last night and it was so well received. Thanks for the easy-to-prepare and yet super tasty recipes. My next attempt will the Grilled Fish With Sun Dried Tomato Relish :)
