Roast Salmon with Parmesan Cheese Crust
This needs only 5 mins to prepare and 15 mins in the oven to cook.
It’s elegant, simple and delicious. The fish practically melts in our mouths.
2 salmon fillets (about 350 – 400g)
1 tablespoon (heaping) fine breadcrumbs
1 tablespoon (heaping) grated Parmesan cheese
Salt & Pepper (to taste)
2 tablespoons extra virgin olive oil
Preheat oven to 200°C
Wash and dry two slabs of salmon fillets.
Grab a bottle of good extra virgin olive oil.
Drizzle some extra virgin olive oil (about 1 tablespoon of oil).
Using fingers, rub the oil over the fish.
Add 1 heaping tablespoon of breadcrumbs to a bowl.
Add 1 heaping tablespoon of grated parmesan cheese. You can use ready grated cheese or grate your own.
Add 1 tablespoon of extra virgin olive oil to the cheese mixture.
Mix the mixture well.
Place the fish on a sheet of baking paper on a baking tray.
Place the mixture carefully on top of the fish. Use fingers to press the mixture into the fish.
Here’s what they look like when ready to roast.
Add some salt and pepper seasonings. I use Masterfoods’ Garlic Pepper seasonings.
Roast for 15 mins, depending on the size and thickness of the salmon fillets.
Serve with pasta or vegetables.
