Seafood & French Beans with XO Sauce
I love XO Sauce and this is one of my favourite dishes prepared with it.
It takes only 10 minutes tops to prepare it.
200g french beans
200g large shrimps
150g fresh scallops
4 cloves fresh garlic
1 tablespoon (heaping) XO sauce
2 tablespoons Shaoxing Huatiao wine
Use 200g of french beans. You may substitute this with sugar snaps, asparagus, courgettes or long beans.
Cut off the ends of the french beans.
Cut the french beans into half.
Wash, peel and de-vein 200g of large shrimps.
Clean 150g fresh scallops. Remove the roe, if preferred.
Chop 4 cloves of garlic into a fine mince.
Heat up a saucepan till very hot. Add 1 heaping tablespoon of XO sauce, with the oil in it and all.
Stir fry for about 30 seconds till the dried seafood in the sauce starts to smell fragrant.
Add the minced garlic. Stir fry till garlic is fragrant. About 20 seconds.
Add the french beans.
Cook till french beans start to turn to a darker green.
Add 2 tablespoons of Shaoxing Huatiao wine and continue to stir fry.
When the beans are 70% cooked, add the shrimp.
And then add the scallops.
Toss well together in the saucepan. And then cover and let it simmer for 30 seconds.
When the prawns have turned pink, and the long beans have turned a dark green shade and softened, the dish is done.
Garnish with fried onions and some sliced chilli. Serve with rice.
