Spicy Lemon and Garlic Chicken Spaghetti
This dish was created because of my deliberate intention to use up a bottle of seasonings called Piri Piri.
This is not a dish for the faint-hearted. If you love spicy food, this will definitely tickle those taste buds.
400g chicken thigh meat
5 cloves garlic
4 teaspoons Piri Piri Seasonings (or to taste)
1/2 cup extra virgin olive oil
2 teaspoons parsley to garnish
Using a peeler, remove the rind of the lemons. Try not to get the pith (white part) coz that part is bitter.
Place the rind and the garlic in a small food processor.
Add about 4 tablespoons of extra virgin olive oil.
Process till the mixture is paste-like. Set aside.
Use Piri Piri Seasonings to marinate the chicken. Piri Piri has salt, pepper and a bundle of spicy ingredients like chilli and paprika in it.
Shake plenty of Piri Piri seasonings (about 2 teaspoons) on to both sides of the chicken and rub the seasonings all over the chicken.
Add about 2 tablespoons of regular cooking oil to a hot pan or stove top grill pan.
When the pan is hot, add the chicken, skin side down. And turn the heat to medium or medium-low.
Let the chicken cook slowly on one side. When the skin is charred, turn the chicken and cook the other side.
When the chicken is cooked. Allow it to cook slightly. And then cut them into long strips. Set aside.
Cook the spaghetti according to manufacturer’s instructions. I always use Barilla pasta.
Rinse the hot pan and place back on the stove. Add the lemon rind+garlic mix. Stir fry for a few seconds.
Add the chicken, juice and all. Stir around to ensure all meat is warmed through.
Add about 2 teaspoons of Piri Piri Seasonings. Stir through.
Add 1/4 cup of extra virgin olive oil.
Add the cooked and drained spaghetti. Toss evenly.
Squeeze the juice of 1 lemon into the pasta. Toss evenly.
Taste the pasta and add more Piri Piri seasonings if necessary.
Garnish with chopped parsley and serve immediately. Dig in!
